Shusse-uo (出世魚), literally meaning "Success Fish," refers to specific species that are renamed as they grow through different stages of life. These fish are considered auspicious symbols, carrying blessings for success and advancement at every milestone of one's journey.

The Journey of the Fish

Buri / Hamachi (Yellowtail)

Buri is a white-fleshed fish renowned for its rich, buttery fat. Whether served as sashimi or grilled, it is delicious and easy to enjoy—especially the sought-after "Kama" (cheek) meat, often grilled or simmered in soy sauce.

The Buri changes its name according to its size:

• Wakashi: The tiny fry, under 15 cm.
• Inada: The small young fish, up to 40 cm.
• Hamachi: The adolescent fish, up to 60 cm (the stage most loved in sushi).
• Buri: The fully matured adult, large and beautifully marbled with fat.

Buri symbolizes celebration, greatness, and career advancement.

Suzuki (Japanese Sea Bass)

Suzuki features translucent white flesh with a delicate hint of pink near the skin. Even when sliced thinly, it maintains its elegant shape, firm texture, and sweet flavor. An adaptable survivor, the Suzuki can navigate between saltwater and brackish waters. Its silver scales sparkle brilliantly, making it a favorite for many anglers.

The Suzuki changes its name as follows:

• Seigo: Young fish under 25 cm.
• Fukko: The teenage stage, up to 60 cm.
• Suzuki: The large, firm-fleshed adult.

Katsuo (Bonito / Skipjack Tuna)

From May to June, Katsuo offers a clean, refreshing taste. This seasonal delicacy is available for only a short window each year.

Katsuo has two peak seasons:

1. Late Spring to Early Summer (May-June): Known as Hatsuo, the fish is lean and refreshing, traditionally enjoyed with zesty ponzu sauce.

2. Autumn (September-October): Known as Modori-katsuo, the fish has stored rich oils before migrating back to warmer currents.

   Katsuo is a popular choice for celebrations because its name sounds like the Japanese word for "Victory." It is served to bless children with the strength to overcome any obstacle.
